Yuquitas and bombitas, our favorite street bites – Lima

This is one of the flavours of my childhood and of most of Limenians , I remember going back home from school with my group of friends and really hungry for lunch, and stopping by one strategically located just around the corner… if one of us had 1 or 2 soles in the pocket (the equivalent of 30 to 60 cents of a dollar) we were rich! you could buy 4 packages with many of them to share, and you will become the best friend of all (at least for that one day)… how something so simple could make everybody this happy? sweet memories, life was much more simple and much more beautiful back then.

The best place to try this delicate street bites is near the big markets of Lima or near big arteries (avenues) of the city. It is almost impossible to pass near one of them without recognizing their classical stands. they look like this:


This food is not the healthiest but is something you should try at least once. You have only 2 options:

  • Yuquitas (salty) a pastry made out of yucca
  • Bombitas (sweet) a pastry made out of

How to prepare them? this is what you need:


  • 4 boiled and pressed Yuccas (cassava, manioc )
  • 1 glass of water
  • 7 glass of all-purpose flour
  • oil to deep fried the preparation.

Preparation, press well the yucca and water, and if is needed mix it in a blender, add flour to the dough, once all well mixed submerge it on a pan with hot oil. served it hot.

Bombitas of sweet potatoes:


  • 350gr of all-purpose flour
  • 1 spoon of baking powder
  • 250gr of warm water
  • 3 spoons of sugar
  • 150gr of sweet pressed potatoes.

Start mixing the flour with baking powder, add mashed sweet potatoes and sugar, mix slightly and add by littles the warm water, amount of time for mixing is 12 min until you form a humid and sticky dough, leave it to rest for 20 min. on a deep pan with hot oil is deep-fried in the shape of little balls. Add on top sugar and serve hot.
